In ancient Greece, red thyme was burned as a purifying incense, and in fact the word thyme comes from the Greek ‘thymon’, meaning ‘to perfume or fumigate’. During the Middle Ages, red thyme was given to knights before a joust or battle to bolster their courage, and placed in courtrooms to ward off disease.
